Aku suka salsa. May be this recipe is nice. Hopefully i can try it this weekend. Will see if the kids will like it!
sweetcorn fritters with avocado salsa ; Tesco Recipe April 2009
What to do
Blanch the sweetcorn in boiling salted water for five minutes, then drain. Stand the husks on a board and carefully cut down along the sides, removing the kernels.
Separate the kernels with your fingers and place in a bowl with the cornmeal, flour, baking powder, eggs, milk and spring onions. Season well.
Heat the oil and drop spoonfuls of the corn mix into the pan. Cook over a medium heat until golden on the underside – about 1½-2 minutes, flip over with a palette knife and cook on the other side.
Mix together the avocado, tomatoes, chilli (if using), coriander and lime. Serve three fritters per person, and top with a spoonful of salsa and crème fraîche (if using).

Ingredients
2 sweetcorn cobs, giving approx 280g (9oz) kernels
50g (2oz) cornmeal
80g (3oz) plain flour
1tsp baking powder
2 eggs, lightly whisked
125ml (4fl oz) milk
4 spring onions, finely sliced
1tbsp sunflower oil
1 avocado, diced
8 cherry tomatoes, quartered
½ red chilli, deseeded and finely chopped (optional)
small handful coriander, roughly chopped
juice of 1 lime
4tsp half-fat crème fraîche (optional)
